December 6 of last year marked the grand public opening of West Steak and Seafood, the newest addition to Carlsbad's restaurant scene.

Owners Gary and Mary West, who own property in San Diego County and have frequented the area for many years, made the move from Nebraska and successful Communications businesses to the West coast and the hospitality industry.

"The property where West Steak and Seafood is located had been in the development process for six or seven years with the intent to use the land for retail purposes," says Jim Walsh, Vice President of Development and operations. "The Wests have a close friend, John Buza, who introduced the idea of development to them and that was that, they began building."

The restaurant is actually a first for the dynamic West duo, who have a Communications background. Walsh, on the other hand, has extensive restaurant experience and was hired on instead of outsourcing the restaurant development needs to a consultant.

And development is exactly what he has done.

"No expense has been spared on the quality of food and the look of the restaurant," Walsh says. "The interior is stunning. We have huge etched glass pieces, beautiful lighting, it's a first rate visual experience." Walsh didn't forget to mention the food.

"We only use the best beef and freshest seafood, some of which is brought in directly from the coasts of Hawaii. The menu features copper river salmon, crab cakes, French onion soup using fresh Maui onions and roasted duck confit." Walsh added that the restaurant is very chef driven. They carry 125 wines and 30 wines by the glass.

For now, the operators of West Steak and Seafood are enjoying their success. Word of mouth has catapulted them to great heights in the local community which has made marketing and advertising almost unnecessary. The goal of the establishment is to be seen as an outstanding, fine dining, prime steak and seafood house.

With that in mind, it must be mentioned that the restaurant is not the only venture for the West Company. They have already opened a West Mart, which is going on its second year in business; the new West Steak and Seafood restaurant; West Bistro, which is currently under construction with an opening date slated for the fall of this year and plans for West Inn and Suites which is scheduled to open in late March or early April of this year and will be located right next door to the restaurant.

"We're receiving phenomenal success with all of our plans whether up and running or on the books. The fact that we've been well received by the community speaks volumes as well." Walsh says of the West developments. "We don't intend to have 100 units but we will continue to grow. Right now we're just enjoying what we're doing."

Walsh goes on to say that the West Development company will begin marketing so as to brand their name as well as current and future developments.

"We want that section of Carlsbad, Cannon and Avenida Encinas, to be known as the 'West Development Corner'."
