The Coyote Bar & Grill is renowned for its live entertainment, but it should be known for its delectable cuisine.
The Carlsbad hot spot has an enormous menu that features southwestern fare, as well as Angus beef burgers, slow-roasted baby back ribs, soups and salads. The eatery's most popular appetizer is southwestern chicken egg rolls, which are stuffed with spicy grilled chicken and Pasilla cream cheese, and served with sweet and sour dip.
Another crowd favorite is the rattlesnake eggs appetizer for $9.75. A Coyote original, the “eggs” consist of smoky shrimp and cream cheese stuffed into seeded jalapenos that are wrapped in bacon.
The Coyote's signature menu item is carnitas for $11.95. The shredded pork is stewed for hours in citrus juices and seasonings, and then charbroiled, making it tender and juicy on the inside and crispy on the outside.
For those who enjoy seafood, trying the ancho grilled snapper with shrimp La Paz is an absolute must. The specialty dish features fresh red snapper grilled and topped with saut?ed shrimp, tomatoes, onion and capers in a light cream sauce; served with grilled vegetables and southwestern wild rice for $14.95.
“We put a lot of labor and time into our food,” said General Manager Aaron Williams. “We make all of our own sauces here from scratch and we prepare all of the food here, even the salad dressings… the desserts are made in-house too.”
Chris Weber, the Coyote's executive chef, has been with the restaurant for 15 years. He even has a sandwich named after him on the menu. The Weber is a gigantic carnitas sandwich with tequila barbeque sauce, guacamole, tomatoes, lettuce and chili fried onion rings on a fresh grilled roll for $9.95.
Regular Rick Rugge said he's been going to The Coyote almost everyday since he moved to Carlsbad in 1992 because he likes the staff and the food.
“I've eaten almost everything on the menu,” Rugge said while enjoying a cocktail at the bar.
Besides delicious food, The Coyote offers patrons a unique atmosphere and numerous specialty drinks. Built in 1990, the restaurant, located within The Shops at Village Faire plaza, was recently renovated.
Its upscale southwestern d?cor includes all new furniture, antler chandeliers, an adobe-style fireplace and a large glass etching of a coyote. Outside there is an expansive enclosed patio with six open fire pits.
The bar boasts about 150 different tequilas; some are $40 a shot. Williams suggests trying the $69 margarita, which is a double shot of Grand Patron Platinum, Grand Marnier Centenaire and fresh squeezed lime juice.
During happy hour, which is from 4 to 6 p.m. Mondays through Fridays, all beers, well drinks, house margaritas and house wines are available for $3. It's also $3 off all appetizers.
The Coyote's biggest attraction is the live entertainment it offers every night. Mondays and Tuesdays are karaoke nights, but the rest of the week bands play classic rock, blues, jazz and country music.
“It's an eclectic crowd that tends to be more mature,” Williams said. “We don't get a lot of young, rowdy kids in here because of the music we play.”
