When it comes to Oktoberfest, no one is more prepared to help you celebrate the traditional German festivities than John Haedrich, owner of Tip Top Meats in Carlsbad.
Last month, Haedrich and his staff made more than 1,500 sausages in anticipation of being North County's Oktoberfest headquarters.
Not only does the European delicatessen sell a vast variety of old world recipe sausages handmade with no preservatives, it also is offering a special German sausage plate this month for only $6.98. The flavorful meal includes knackwurst, bratwurst, polish sausage, red cabbage, German potato salad and sauerkraut.
“Our wurst is the best. No Oktoberfest would be complete without our popular potato salad, sauerkraut and unique old world condiments,” Haedrich said. “Our sauerkraut is an old family recipe. I give all of the credit to my mother.”
Haedrich emigrated from his native Germany to America in 1959. By 1967, he was living in Glendale, where he opened his first butcher shop. He moved to Carlsbad in 1977 and opened the doors to Tip Top Meats in 1979.
Haedrich said his father, grandfather and great-grandfather were all butchers. He said he joked to his mom that he wanted to be a dentist, but he's glad he stuck with his family's trade.
“To be a craftsman in an industry like this, it's a dying art,” Haedrich said. “I really enjoy it.”
Judging by the fact that the delicatessen is swamped on weekends and bustling with customers daily, the community really enjoys it too. Everyone from pilots to people speaking German can be found eating breakfast, lunch and dinner at the eatery.
Haedrich said Tip Top Meats is so successful because his method to business is quality and service.
“If you make things good, people come back,” he said. “There is no place like this anywhere. That is what people tell me.”
Tip Top Meats is unique in that it is a full-service meat market, deli eatery and gourmet market all in one. Another virtue of the delicatessen is that they will cook any meat, including turkeys, at no extra charge.
Tip Top Meats features German fare like zwibel rostbraten, jaeger schnitzel and liverwurst, as well as numerous items imported from Germany, including sauces, soups and cookies.
“We have the best selection of imported German beer available in North County,” Haedrich said. “Celebrate Oktoberfest with the world's best beers.”
