Coca Cola posters and black and white photographs lined the wallpapered walls and the oversized, cushioned booths allowed for lengthy lunches or late night dining.

In 1980 a man by the name of Doug Cavanaugh happened upon a dilapidated building at the end of Balboa Pier. Through the help of friends and family, Cavanaugh, along with his partner Ralph Kosmides, renovated the old building that had once been a bait shop and on December 10, 1982 they opened Ruby's Diner. The tiny 45-seat restaurant, which opened with three employees and a simple menu of burgers, dogs and malts, was named after Cavanaugh's mother.
A year later the duo opened a slightly larger restaurant in Orange County and today there are close to 50 Ruby's diners in America.
Any restaurateur knows that selecting the perfect location or locations is never easy but there are a few things to look for: Guest convenience, a thriving area and, for Ruby's, an atmosphere that is conducive to enhancing the look and feel of the 1940's era.
The Carlsbad Premium Outlet Center on Paseo Del Norte in Carlsbad has made another perfect home for a Ruby's Diner.
"The fun atmosphere inspires people to come to Ruby's for the first time," says Cavanaugh, "but our high quality food, friendly service and reasonable prices keep them coming back."
Complete with red vinyl booths, white Formica tables and authentic memorabilia, Carlsbad's Ruby's Diner has encompassed the original concept behind this now-popular chain.
Manager Robert Alejandre, who has been with the Carlsbad chain for 9 months and with the company itself for twelve years, feels he is with a truly great company.
"Ruby's knows how to treat you right. Whether you're an employee or a customer, especially if you're a customer, the company goes the extra mile to make sure you're satisfied. We're number one in customer service and there are not a lot of organizations that can say that."
Alejandre says that the Carlsbad location has been around for approximately eight years and is owned by Joe Campbell.
"This location is wonderful because it's right in the middle of everything. Customers can enjoy LEGOLAND, the beach, shopping at the outlets and a terrific meal all in one area."
The restaurant is also very family friendly and caters to it's young, and not so young patrons.
"We have a discount program we call the Jitterbug Club for our guests who are 55 and over. When they join the club they receive a 10% discount on their meals."
A banquet facility in the back of the restaurant with seating for approximately 50 people is the perfect place for birthdays and special events.
They also have a fundraising program available for schools and non profit organizations. To participate, those interested would pick a day they would like to come by the restaurant with information on their program and between the hours of 5 p.m. and 9 p.m. the group would get 20% of all sales.
