The newly open Twenty/20 Grill & Wine Bar features an international menu with upscale offerings in a casual setting.
The airy restaurant, located within the Sheraton Carlsbad Resort and Spa, provides a variety of options to satisfy any palette. Inspired by vineyard cuisine from around the world, the menu is the culinary vision of Chef Steven Patrick.
Patrick's culinary training began at age 8, when his family put him in charge of preparing ingredients for the many dishes served at the restaurants his parents owned. Patrick is a native of California with an extensive background in wine country resorts and restaurants.
His recipes are hailed for their innovative use of artesian ingredients, sustainable ocean products, natural meats and fresh, locally grown produce. Patrick said the quality of the ingredients the Twenty/20 Grill purchases are unmatched, and although the cuisine is presented beautifully, the artistry of each dish happens unintentionally.
“A chef needs to think with his mouth first,” he said. “Thinking about flavor profiles is the most important for us.”
Indeed, each item on the restaurant's breakfast, lunch, dinner and lounge menus is prepared to absolute perfection. Just reading the descriptions is a mouthwatering experience.
Breakfast offerings include banana chocolate French toast drizzled in raspberry sauce for $11 and Irish oatmeal served with sun-dried blueberries, cranberries, brown sugar, pomegranate honey and toasted pecans for $7, as well as traditional items like omelets and eggs benedict. The lunch menu features appetizers, salads and pizza oven grinders and sandwiches like the Eighty/20 charred chuck cheese burger made with Brandt Farms organic beef, Irish white cheddar, limestone lettuce, steak tomato, red onion, cornichon, beer mustard and caramelized onion jam on a toasted sesame bun for $11.
The dinner menu offers modern recipes infused with international ingredients, such as the iron seared rib eye saddle steak served with white corn polenta, black olive drizzle and black sea salt for $29. The menus also include “Things to Share,” which Patrick said was influenced by his years of working with winemakers.
“We tried to bring a little bit of the vineyard or wine cellar to the dining experience,” he said. “We want people to take their time with the food. The wine list is meant to make you feel like you stepped into another place and to relax.”
There are more than 80 wines available on the wine list, which includes Italian, Spanish, French and German varietals, as well as Japanese sake. The Twenty/20 Grill also boasts a 14-page drink menu that features almost 40 martinis, more than 15 frozen drinks, seven margaritas, nearly 20 beers and dozens of cocktails, teas and coffees.
Mixologist Jason Dannewitz said the margarita, pina colada and bloody mary mixes are all made fresh daily with the highest quality ingredients. He pointed out that during happy hour, which is from 4 to 6 p.m. Monday through Friday, that all beers, wines and spirits are $1 off.
“We make the drink memorable, but not the price,” Dannewitz said. “We don't call it happy hour, we call it relax, connect and unwind.”
But what patrons will find most memorable are the sweeping views of the coast and the refreshing ocean breeze as they dine on the outdoor patio or sip drinks in the patio's the fireside area, which should soon be complete.
