The courage to rethink food as medicine

As we move further into the new year, many of us are still working to honor the goals set on New Year’s Day. At TrueCare, the focus goes beyond a standard approach—transforming short-term resolutions into intentional, values-based goals that shape how staff and patients show up in the community. As part of this commitment, TrueCare is courageously empowering patients to rethink food as medicine, supporting whole-person care, sustainable habits, and long-term health and well-being.

Leading this work is Dr. Jorge Otañez, TrueCare’s associate chief medical officer, who reminds us that nutrition is one of the most powerful interventions available:

“We know from countless studies that eating more fruits, vegetables, and whole, plant-based foods can improve chronic conditions, prevent new health problems, and sometimes even help them disappear,” Dr. Otañez said. “There is growing evidence that healthy eating—paired with exercise, mindfulness, and social support—can prevent disease, reverse complications, and dramatically improve quality of life.”

This work is part of a new initiative at TrueCare—the TrueWellness Model—which integrates movement, nutrition, and community connection into a holistic approach to health care. The results have been impressive.

Vincente Guzman, a 75-year-old TrueCare patient, is experiencing the benefits of the program and demonstrating that it is never too late to make thoughtful, informed choices about what is on one’s plate. Over the course of 12 weeks, customized meals—guided by Mama’s Kitchen dietitians—produced measurable improvements in Guzman’s overall health.

Results revealed stabilized kidney function, notable weight loss, and reduced blood sugar levels. The patient’s nephrologist recognized clear clinical progress, and Guzman reported feeling healthier and more energetic.

For Guzman, the outcomes represent more than a resolution or short-term goal; they reflect a second chance at an improved way of life. “Tenía muchas enfermedades. Me he recuperado bastante,” he shared.“ I had many health issues, and I’ve improved significantly.”

Working closely with patients like Guzman has reinforced Dr. Otanez’s belief in an ecosystem of care where the entire community—patients, staff, and supporters—plays a role in expanding access to health care for all.

“Building a true community of care means recognizing that while we are health care experts, our impact grows when we partner with the community,” Dr. Otanez said. “What happens within the four walls of the clinic is only part of the equation. With support from health educators, nutritionists, nurses, and our full care team, we can go further.”
